Black Bean Chili Ingredients:       “Change For Change”

      

1/2 c small diced carrots 1 1/2 c water 1 1/2 c diced white onion 1 c diced celery 1/2 c diced green pepper 2 seeded, diced, fresh jalapenos 3 c red spaghetti sauce 2 1/4 c dried black beans (cooked to 4 1/2 c) or 3, 15 oz cans 1/2 c cilantro, chopped 2 TBS cumin 1 TBS chili powder 1/2 tsp crushed hot chili peppers (dried) 1/2 tsp salt

Directions: 1. Cook the dried black beans 2. Dice the veggies 3. Boil the carrots, then add the rest of the veggies and cook until tender. 4. Add the remaining ingredients and simmer uncovered for 30 minutes to 2 hours and serve. The recipe will feed 4 - 6 people. If the broth is too thick, add water, if too thin, simmer longer.
