MALBEC 2013 MALB Interesting ru ruby red with a violet hue. Blackberries predominate on the nose, along with plums in syrup, aromas, latte, milk chocolate, and an interesting floral component. The French oak blends nicely, pastry aroma elegant touch of toast and a sweet sensation. The medium-bodied palate is well balanced, lending an el andd the tannins are nearly imperceptible on the way to a long finish.

HARV EST Harvest Period: April 12–May 16 Vintage Report: The weather during the 2012–2013 season began with a cooler-than-normal spring that delayed the onset of budbreak and flowering with respect to the previous season. December was also rather cold, and rain in the central zone resulted in a vigorous elongation of the berries that caused the bunches to be heavier. A cold January set veraison back, and rainfall put the quality of the most sensitive grapes at risk. Our Malbec comes from two very different spots in the Colchagua Valley with ripening at very different times. Despite February’s unusually high temperatures (38º C / 100.4º F and higher), the windy conditions in Marchigüe kept the grapes cooler, and therefore they ripened more slowly than the grapes in Apalta, where the Malbec harvest begins. The grapes reached harvest in very good health with medium-sized and well-concentrated bunches.

V INEYAR DS The vineyards are located in the Colchagua Valley in our Apalta and El Arcángel de Marchigüe estates. The soils of these two interesting terroirs are derived from granite with differing degrees of weathering as well as a variety of slopes, effective rooting depths, organic matter content, and most importantly, types of geological influences in their formation.

MENU SUGGESTIONS

Apalta soils are of colluvial and alluvial origin and are therefore of differing depths and textures in the higher sectors, although the soils in the lower areas tend to be more similar due to the influence of the Tinguiririca River. Apalta’s Mediterranean climate produces summer nights that are quite cold in contrast to hot days, which encourages red grapes to ripen very slowly. Marchigüe, in contrast, has moderate slopes and shallow soils that are basically of colluvial origin, evidence of which are the angular rocks and shallow depths. The climate tends to be more severe than Apalta’s, with more wind and solar radiation and less precipitation due to its location in the Coastal Mountains. Vineyard density is 5,555 plants/hectare (2,250 plants/acre) to obtain yields of approximately 10 tons/ha (4 tons/acre). Irrigation is carefully calculated due to the variety’s slow ripening, despite the fact that some berries tend to dehydrate and are removed prior to vinification.

Our 2014 Cabernet Sauvignon comes from cool-climate Central Coast grapes and has been blended from Cabernet Sauvignon and small amounts of Syrah, Carignane, Malbec, Petite Sirah, and Petit Verdot. The wine is medium bodied with aromas and flavors of black cherry, blackberry, vanilla, toasty oak, and a hint of coffee. Ripe, soft tannins and toasted oak lead to a long finish. Enjoy with roasted or grilled meats, hearty pasta, or strong cheeses.

Our 2014 Cabernet Sauvignon opens with aromas of cherries, berries, cedar, brown sugar, and toast. Flavors of berries, toasted marshmallow, chocolate, and graham cracker follow with a toasty caramel finish. This medium-bodied wine pairs deliciously with grilled meats and tomatobased pasta dishes.

Recommended Cellaring: 0-3 years Production Notes: After harvest the grapes were quickly crushed and pressed into stainless steel tanks where most of the juice was fermented at controlled cool temperatures to capture the intense varietal flavours. A small portion of juice was fermented in old oak barriques to contribute to the weight and complexity of the wine. After extensive tasting trials by the winemakers, the wine was then blended, finished and bottled.

APPELLATION Mouton Cadet Sauvignon Blanc is made from rigorously selected grapes grown by our partner wine-growers in the EntreDeux-Mers, the best area for white grape varieties in the Bordeaux region. Baron Philippe de Rothschild's winemakers monitor the selected parcels throughout the vegetation cycle, advising the growers on vineyard practices in order to meet the exacting quality standards required for Mouton Cadet. TERROIR The Entre-Deux-Mers, situated between the Dordogne and the Garonne, is made up of very high-quality, predominantly clay-limestone soil, ideal for all white grape varieties. Limestone gives the wine a mineral freshness, while clay soil brings out the fruit and the typical sauvignon flavours of boxwood and blackcurrant bud. 2012 VINTAGE After a cold and dry winter, the weather in spring was very changeable. A very warm and sunny March was followed by an equally cool and rainy April. Summer temperatures were relatively low for the season, with a lot of showery weather. However, the presence in the vineyards and the skill of Baron Philippe de Rothschild's winemakers helped to make the best of the conditions and to guarantee a high-quality vintage. Fine weather in September enabled the white grapes to reach full maturity and express fine aromas and flavours. VINIFICATION

Tasting Notes: The bouquet is an inviting mix of tropical, passionfruit aromas. Palate entry is luscious and lively, bursting with passionfruit. This is a fantastic example of Black Label Sauvignon that is equally enjoyable on its own and with food.

Background Information

Pale straw with green hues, the Taras Bin 681 Chardonnay exhibits fresh citrus, melon and peach aromas. The bouquet is complexed by subtle hints of vanillin oak characters. A medium weight palate shows fresh tropical fruit characters, and has a soft, lingering palate. This wine has been crafted to consume as a young wine.

Fruit for this wine was sourced predominantly from the Riverland area, and was picked in the cool of the night in order to retain freshness of flavour. After this fruit was crushed it was transferred to stainless steel tanks were it underwent a temperature controlled fermentation. A small BORDEAUX / MOUTON CADET portion has been exposed to oak, adding another dimension to this wine.

Recommended Food: Can be enjoyed with a variety of food. Serve it with veal, seafood (brilliant with oysters) or a chicken dish such as a mild chicken korma with crispy popadoms.

Our winemakers decide the harvest date after tasting the grapes. After picking, the grapes are destemmed, lightly crushed and chilled. Cold pre-fermentation maceration helps to extract the best aromas and flavours in order to obtain fruit-driven wines in the typical Mouton Cadet style. The grapes are then pressed slowly and gently in order to preserve the refinement of the musts.

These are separated according to the degree of pressure applied and vinified separately after settling. Alcoholic fermentation takes place at controlled temperature (18° C) in order to preserve all the refinement of aroma and flavour. MATURING Mouton Cadet Sauvignon Blanc is matured on fine lees in vats for four months. The wine is regularly stirred up to keep the lees in suspension, making the wine fuller and rounder.
