Introduction Energospiritual Diet (ESD) is a spiritual system that uses food as a tool for our mental development. EnergoSpiritual Diet was created by Athanasios Panagi (professional chef, healer, energy mentor) and Korina Kontaxaki (Yoga, meditation and yoga philosophy teacher). The main goal of EnergoSpiritual Diet is to use the ancient wisdom of the yogis combined with the new discoveries about food, for mind clarity, meditation and maximum vitality. It is not intended for fitness or health problems although it brings the necessary balance to assist any goals. NOTE: if you have health imbalances (low/high blood pressure, diabetes, cholesterol etc.) please ask your doctor before practicing the Energospiritual Diet.

FIRST STEP AYURVEDA: find your personal DOSHA According to the ancient art of Ayurveda there are three temperaments, where there is one or two or three of the following: air / bile / mucus. Each temperament must encourage the habits that reduce the element that already exists, to avoid diseases (psychological / physical and mental). EnergoSpiritual Diet: General Rules 1. Vegetarian/vegan diet. Raw 40% –cooked 60% NOT in the same meal. Yoga and Ayurveda has 3 categories of food: Rajasic (aggressive)/ tamasic (dull)/ satvic food (balanced). We eat mostly Satvic food.

3. All the tastes in the main meal Ayurveda teaches that all six tastes should be eaten at every meal for us to feel satisfied and to ensure that all elements are represented. Note: remember the rule of numbers 3-5. 5. SUGAR: the greatest addiction. Three levels to get over the addiction: 1. No white sugar. Use brown sugar or molasses. 2. No crystallised sweetener only carob, maple syrup etc. 3. No sweeteners only dry fruit (Fruit cream, dry fruit and nuts mix)
EnergoSpiritual diet: Smashed raisings with sun flower seeds, instead of jam.
6. Fasting: pause of digestive system to rest, burn, get stronger, reset. 1. Skip one meal 2. Only one kind of food (ex. Only boiled rice, boiled vegetable ..) 3. Only raw (fruits, vegetables, nuts etc.) 4. Only fruit 5. Only liquid (juice) 6. Only water NOTE: I f you never tried fasting before, please ask your doctor before start any of the above. Always try the easiest (No 1) before you go to more difficult kind of fasting (No 6).

Swami Satyananda talks about ashram food: “When we talk about diet, let us not talk about it in terms of puritanism. We must remember only one thing in this case; to be sure the body is capable of digesting all the food. I have discovered that instead of cooking the food in your stomach, it is best to cook it properly in the pan. Five or six condiments should be added during cooking to liberate the enzymes and chemicals which enhance digestion. The combination of heat, condiments and enzymes breaks down the food into smaller and more basic components, thus making it easier to digest. The food we eat is not merely to satisfy our taste. Every food item has an essence in it, and in yoga we call this sattva. Sattva means the ultimate essence of food, but please do not mistake this for vitamins or minerals. Sattva is the more subtle form of food. When you eat for the sake of taste or enjoyment, instead of attaining the sattva you only get the gross things. When we overeat we create a burden for the digestive system, and when the digestive system is overburdened we are unable to extract the sattva from the food. Sattva is a substance which nourishes the thoughts and nervous system. When the thoughts are fed with sattva they are more refined and pure, and one is able to live in higher consciousness. Over the years I have done a lot of work on food because I run ashrams where I have to manage all the affairs in relation to money, labor and the spiritual welfare of the ashram inmates. I have evolved two wonderful foods which suit everybody. One is for those who like rice and the other is for those who prefer wheat. You either cook the rice with dal (pulses such as lentils), vegetables and a few condiments, or you pound the wheat, add all the same ingredients to that and cook it well. I call this integrated kichari. You can add anything to it and it's alright. This is the cheapest and most nutritious of all the foods I have eaten in any part of the world. You can also eat as much kichari as you want without any fear, because it digests so smoothly. This diet is suitable for all yoga practitioners and it is ideal for those who are ranging high in spiritual life and are about to merge into the ultimate state. NO leftovers from yesterday/ NO frozen food/ No overcooked food/ Nothing from a tin or pre-cooked, packaged food. 4. NO animal products – there is no vitality in these products. Yogis used to live with milk and buttermilk but not anymore. 5. NO pasteurized dairy or pasteurized vegan milk / NO bread from modern bakeries. (They are frozen!) 6. 3. EASILY DIGESTED FOOD 1. Not all vegetables are healthy for everyone. Find what suits you. GENERAL RULE: when we feel bad, bloated, heavy, after we eat something, this is not for us! 2. Stop eating before you feel bloated. WE ARE SICK FROM OVER NUTRITION! More carbohydrates => diabetes More protein => acidity More fat => cholesterol, heart problems. Sample menu Basic rules: 1. 3-5 ingredients 2. We do not name the meals “breakfast” “lunch” or “dinner” 3. One raw meal, one complete meal, one liquid meal, with 5hours space between them 4. We eat only when we are hungry and we skip meals if we are not hungry. (We also eat more when we are hungrier, and we eat natural sweets when we really need it)
MEAL 1 Big raw salad with 3 greens/ 1 aromatic herb/ 1 fruit/ 1 healthy fat (avocado/ olive oil/nut/tahini/nut butter) Or Salad 3 greens/1 aromatic herb/1-3 sprout/olive oil and if we are very hungry 1 japati.
