Prosphora Byzantine style - 1500 gr. Hard wheat flour (yellow) - 800 ml lukewarm water (21-30 °C or 70-86 °C °F ) - 2 teaspoons salt - 300 gr. dough yeast - 1 wooden prosphora seal 17cm ( hand carved) - 1 round aluminium baking pan (26-28 cm.) - 1 kitchen scale - 1 kebab stick - Dough rising for 3-6 hr. (depending on room temp.) - Oven preheating for 15 min at 180°C (355°F) - Baking at 180°C (355°F) for 50-60 λεπτά (no fan!) Notes: Before we do anything we light a candle, incent and read the Prosphora Making Prayer. In a big bowl we add the 800 of water, the salt and dissolve the dough yeast. We add aprrox. 500 gr. flour and we mix it with a wooden ladle (till it becomes thick like mustard). We cover the bowl with a towel and leave it be, for at least 24 hours (it must become full of bubbles). We add the rest of the flour, and start kneading by hand . We knead for 20 min. saying the Jesus Prayer( Lord Jesus Christ, Son of God, have mercy on me, the sinner). After we have finished kneading we cut out 300 gr of dough and put it in a food container for next time (sustainable up to 2 weeks in the refrigerator). We cut the dough in two parts. The bottom part 1200gr. And the top part 800gr. We give both parts a round shape. With a pastry brush we moisture the top of the bottom part, and the bottom of the top part, and put them together. We press the wooden seal hard on the top part and leave it in place for 3 min. With a kebab stick we make 24 holes, in order to allow the big air bubbles to escape. We let the dough rise for 3-6 hours (depending on the room temperature). We bake in a preheated oven for 1 hour at 180°C (355°F), no fan! ). Our Prosphoro is now baked but hard. To make it soft we wrap the Prosphoro with a towel and close it in a bag till it cools.

O Lord, my Lord, with faith I accept your words; help me a sinner, to prepare the Bread of Offering, that the works of my hands may be acceptable at Thy Holy Table and may become through the operation of Thy Holy Spirit the communion of Thy Most Pure Body for me and for all Thy people.
