4 cups kale, coarsely chopped & packed 2 tsp olive oil, extra virgin 1 large garlic clove, crushed 3/4 tsp salt 1 tsp black pepper, ground 2 large celery stalks, diced 1 large green bell pepper, chopped 1/2 medium zucchini, chopped 1/2 long English cucumber, chopped 1 cup broccoli, chopped 1 cup green peas 1 cup alfalfa sprouts
Add kale, olive oil, garlic, salt and black pepper to a large salad bowl. Massage until the kale starts to soften and wilt, 2 to 3 minutes. Add remaining ingredients to the bowl and mix. Serve cold.
