Deskripsi ME (Milk Electricity) Milk Electricity, atau yang lebih akrab disebut ME merupakan alat pasteurisasi susu kejut listrik tegangan tinggi yang mampu menurunkan jumlah bakteri dalam susu tanpa merusak kandungan gizi di dalamnya. Penerapan inovasi ini, dapat memperpanjang umur simpan susu sehingga lebih aman dikonsumsi, yang pada akhirnya nilai jual susu pada tingkat peternak akan meningkat. Kebermanfaatan dari karakteristiknya yang unggul dapat diaplikasikan untuk pasteurisasi susu kambing, susu kedelai dan beberapa aneka minuman seperti juice.

Description of Milk Electricity (ME) Milk Electricity, or that is called familiarly by ME is high voltage electrical shock milk pasteurizing device that able to decrease bacterial amount in milk without damages the nutrient content. The innovation implementation able to lengthen storage time so it is safer to consume, that finally the sales value of milk at the ranchers level will increase. The excellent benefits and characteristic can be applied for pasteurization of goat milk, soy milk, and other beverage such as juice.

Tujuan Tujuan Jangka Pendek 1.Memperkenalkan dan menyebarluaskan sistem pasteurisasi susu non thermal kejut listrik kepada stake holder peternakan di Jawa Timur.

Tujuan Jangka Panjang 1.Mencapai 40 % target pasar di Jawa Timur di tahun 2015, melalui diversifikasi usaha alat kejut listrik dan produk olahan susu dan turunannya. 2.Mendirikan Sentra Pengolahan dan Produksi susu kambing serta produk turunannya: yoghurt, milk shake, ice cream, keju. 3.Menularkan ilmu, berbagi dan membuat pelatihan bagaimana proses pengolahan susu dan produk turunannya menggunakan teknologi Milk Electricity kepada kelompok peternak di Indonesia.

Goals Short term goals 1. Introducing and disseminating the electrical shock non thermal mil pasteurization system to ranch stakeholder in East Java.

Long term goals 1. Reaching 40% of target market in East Java in 2015, through business diversification of electrical shock device and milk processed product and its derivatives 2. Establishing goat mil processing and production center and its derivative products: yoghurt, milk shake, ice cream, cheese. 3. Transmitting knowledge, sharing and make training how the milk processing and its derivatives product by using Milk Electricity to rancher groups in Indonesia.

Key Historical Ide Inovasi Teknologi ME berawal dari kejelian kita melihat masalah yang ada di dunia peternakan, dimana susu setelah diperah memiliki masa simpan yang cukup pendek, yaitu 4-5 jam saja pada kondisi ruang, dari situ kita merasa prihatin terhadap masyarakat peternak, terlebih untuk saat ini peternak sering mengeluhkan bahwa nilai harga jual susu segar masih rendah. Saat ini harga susu ditentukan dari kualitas susu dengan parameter, jumlah total bakteri beserta kandungan gizi yang ada di dalamnya. Peternak dan pengusaha susu sapi umumnya menggunakan metode pasteurisasi dengan teknik pemanasan (HTLT- High Temperature Long Time) dan (UHT-Ultra High Temperature) untuk menghilangkan bakteri. Efek buruk dari metode ini adalah rusaknya protein dan zat gizi lain yang terkandung dalam susu, bahkan kerusakannya bisa mencapai 50%. Metoda kejut listrik tegangan tinggi (PEF-Pulsed Electric Field) yang digunakan dalam inovasi ini dapat menghilangkan bakteri dan organisme lain yang ada dalam susu tanpa merusak kandungan protein dan zat gizi lainnya. Di samping itu, dengan teknik metoda PEF ini dapat dihasilkan susu dengan umur simpan yang lebih lama dibandingkan dengan metode Pemanasan. Harapan luaranya ekonomi masyarakat peternak bisa terangkat dengan meningkatnya nilai jual susu, sejalan dengan berkembangnya UKM-UKM susu di Indonesia. ME adalah produk solusi dari masalah di atas. Dan karena solusi yang ditawarkan adalah inovasi yang bernilai ekonomi dan bernilai sosial maka kedepannya produk ini akan digunakan oleh banyak peternak dan pengusaha susu. Apalagi didukung dengan data permintaan konsumsi susu yang terus meningkat jauh melebihi kemampuan produksi domestik Pada tahun 2011 produksi susu dalam negeri hanya mampu memenuhi 40% dari total kebutuhan nasional. Key Histories Idea of ME technological innovation began from our carefulness in looking at problems in the ranch world, where the milk after squeezing has short storage time 4-5 hours in room temperature, in this case we are concern to the rancher community especially for today, the rancher often complaint about the fresh milk price that still low. Today the milk price is determined from the quality with parameter of bacteria amount and the nutrient content. Rancher and cow milk businessman usually used pasteurization technique of heating (HTLT – High Temperature Long Time) and (UHT- Ultra High Temperature) to remove bacteria. Bad effects of the method is the damage of protein and other nutrient in the milk, even the damage reaches 50%. The PED (Pulsed Electric Field) used in the innovation able to remove bacteria or other organism in the milk without damaging the protein content and other milk nutrient. Beside that, with the PEF method it can be produced milk with longer storage time compared with heating technique.

The expectation is the rancher community

economics can be lifted with the increase of milk selling price, along with the development of milk small business in Indonesia. ME is solution for the problem above. Because the given solution is innovation with economic and social value then the product in the future will be used by many ranchers and milk businessman. Furthermore it is supported with the milk consumption demand that increase more than the domestic production in 2011, the domestic milk production only able to fulfill 40% form the national demand total. Then it can be concluded that ME market in domestic market is high enough.

Latar Belakang Susu memberikan sumber gizi yang baik untuk kesehatan dengan kandungan protein yang tinggi. Selain kandungan nutrisi yang baik, susu juga mengandung bakteri jahat yang bisa menyebabkan orang sakit. Produksi susu dengan cara pasteurisasi thermal menyebabkan hilangnya banyak kandungan nutrisi baik di dalamnya. Lama simpan susu dengan metode termal hanya bertahan 5 jam di ruang terbuka Peternak seringkali harus membuang susu karena tidak cepat terjual.

Teknologi Metode PEF = Pulse Electric Field. Menghasilkan Ouput Kejut Listrik Tegangan Tinggi 30-50 kV. Telah dipatenkan dengan nomor P00201100353. Telah teruji di laboratorium Biomedik, dan Mikrobiologi FK UB serta Lab LSIH tentang bakteri dan kandungan protein. Teknologi sederhana , mudah dioperasikan. Hemat Energi. Mampu membunuh bakteri susu dengan efisiensi 97,125%. Memperpanjang usia penyimpanan susu.
