Tomato Bisque

Ingredients:  1 tbsp olive oil or 1/2 tbsp butter  1 large white onion, chopped ¼” pieces  4 cups chicken broth  1 potato, peeled and roughly chopped  2 cups of fresh tomatoes (roughly chopped or sliced)  1 cup milk  kernels from 1 large ear of corn  1/2 cup heavy cream or crème fraiche  1-2 tbsp of aguve sugar (regular sugar okay)  Salt and ground pepper  parsley and basil for garnish Procedure: 1. In a medium (4-qt.) soup pot, heat olive oil over medium heat. Add the onion and cook, stirring frequently, until lightly brown, about 5 min. Scoop out half of the onion and set aside. Add the broth, tomatoes, and potato, partially cover, and simmer over medium-low heat for 20 min. **note: tomatoes can be peeled but doesn’t need to be.

2. In a food processor or in batches in a blender, purée the mixture and return it to the pot.

3. Add the corn to the soup along with the milk and reserved onion; bring to a simmer and cook for 10-15 minutes 4. Remove from heat, stir in the cream, taste, and season with salt. 5. Serve in warm bowls garnished with parsley
