Roasted Tomato, Feta & Pesto Pasta Ingredients: 

1 lb package of whole wheat rotini or penne pasta 1 package feta cheese 2 Tbsp pine nuts 6-8 roasted tomatoes (see separate recipe), chopped 3 Tbsp olive oil 1/3 cup of pesto (see separate recipe) Fresh parmesan for topping pasta

Instructions: Bring water to a boil in a large pot, add salt. Toss in the pasta and cook according to package instructions. Heat olive oil in a sauté pan, add the chopped roasted tomatoes, and lightly sauté over medium-high heat until hot and any liquid from the tomatoes has been reduced. Toast your pine nuts in small sauté pan, over medium heat, until browned and fragrant. Remove from heat immediately when done. Drain the pasta. Throw back in the pan, add the pesto, roasted tomatoes, pine nuts, and crumble the feta into the pasta—toss. Serve with a little grating of fresh parmesan on the top. Pour a big glass of red wine and eat up. Serves 4.
