Strawberry, Feta & Walnut Summer Salad Ingredients:       

   

1/3 cup walnuts 2 Tbsp maple syrup Sea salt 1 pint strawberries, quartered 1/3 cup feta cheese, crumbled 2 scallions, sliced 1 bunch of greens (assorted field greens, baby spinach, and arugula all work well for this) ¼ cup olive oil 2 Tbsp balsamic vinegar 1 Tbsp honey 1 tsp chopped fresh thyme

Instructions: Place your walnuts and maples syrup in a pan over medium heat and cook until the syrup thickens and caramelizes, forming a glossy glaze on the walnuts—this takes about 5 minutes. Dump the walnuts on parchment paper, and sprinkle with sea salt immediately (you can double or quadruple the recipe in order to have some of these on hand for future snacking or salad use). Wash your greens and dry. Slice your scallions, crumble your feta, and wash and quarter your strawberries. Whisk together the olive oil, balsamic vinegar, thyme and honey. Pour over greens (you may not need all of it depending upon how big your bunch of greens are—start with half the recipe and add more if needed) and toss. Arrange greens in bowls, top with feta, walnuts, scallions and strawberries. Makes 2 dinner sized salads, or 4 side salads
