Simple Split Pea Soup Ingredients: 1 clove garlic, minced or 1 tsp garlic powder 1/2 onion, finely chopped or 3 tsp onion powder 1/2 cup chopped carrots 1/2 cup chopped celery 3 cups water (may use vegetable or chicken broth) 3/4 cup dry split peas 1/2 tsp pepper 1/2 tsp salt

Directions:



Sauté garlic, onion, carrots & celery in large pot coated with nonstick spray or small amount of water or broth.



Add water (or broth) and split peas in the same pot and stir to mix. Bring to a boil.



Reduce heat to medium low and cover. Simmer about 2 hours. (Thin the soup with water if it gets too thick.)



Add salt & pepper (other seasonings to taste) at the end of the cooking time.



Serve the soup hot with bread or whole wheat muffins.
