Ingredientes: Masa quebrada: 250 g harina 180 g mantequilla 1 cc sal 1 cc azúcar 1 yema de huevo 50 ml leche templada Relleno: 850 g cerezas 100 g azúcar 1 sobre de azúcar avainillado 45 g sémola de trigo Para pintar: 1 clara de huevo
Preparación: Mezclar la mantequilla con la leche, el azúcar, la sal y la yema y luego con la harina. Amasar y formar una bolita, ponerla en un bol, tapar con film transparente y dejar reposar en la nevera una hora. Lavar y deshuesar las cerezas. Mezclarlas con el azúcar y la sémola. Dividir la masa en dos partes, una mas grande y otra mas pequeña. Estirar la parte mas grande y forrar con ella un molde redondo desmontable de 22 cm de diámetro, dejando un borde de unos 3-4 cm. Poner las cerezas y cubrir con la masa restante. Pintar con yema batida. Hornear unos 30 minutos a 190ºC en el horno precalentado (arriba+abajo+ventilador). Sacar, dejar templar y desmoldar.
