1 tsp Dried Dill per fish 1/2 Lemon, sliced thin 2 Whole Trout (Approx. 1.25 lbs) Nonstick Cooking Spray

Rub fish with grapeseed oil; sprinkle with salt & pepper, some dill & garlic powder. Open the fish at the middle – where it was sliced to clean. Sprinkle the inside liberally with dill, garlic powder, sea salt & pepper. Coat the inside of the fish, both sides, with softened butter – about 1 tbsp per fish. Slide 2-3 pieces of thinly sliced lemon inside & close, like a sandwich. Preheat grill to medium heat. Spray a grilling basket lightly with Cooking Spray. Place fish in the basket & on to the pre-heated grill. Turn grill down to medium low; close lid. Cook 6 minutes. Flip. Cook another 6 minutes; remove from heat. Rest 3 mins. before handling. Pull skin from the meat & discard. Using 2 forks, gently press the filet away from the bone, while stabilizing the bone with the other fork, slide the filet off of the bone in one piece. Garnish with slices of grilled lemon, salt & pepper. Serve over rice.
