Dear Leanne, Easter Traditions Contest May has been a month of growth and a time to look for additional office space for the Firm. This May edition spotlights a paralegal from the South Carolina office; gives an update on the scholarship program; includes another recipe; and features some of my recent blogs. We are also including some Firm pictures from the past month. Our website (joelbieber.com) as well as our Firm Facebook page continues to post pictures that show our active staff, including many of their adventures and volunteer opportunities. Employee Spotlight Andi Owens, Paralegal Greenville Paralegal, Andi Owens was born in Greenville but was raised on Lake Keowee in Six Mile, South Carolina. Initially she attended Clemson University then continued her studies at Greenville Technical College with an emphasis in Criminal Justice. She later finished with a degree in Paralegal Studies. Andi and her husband, Shawn, enjoy spoiling their rescue dogs, Owen and Hurley and their niece, who they call Princess. They also love water sports, visiting the beach as often as the can, and working with Country Santa, a nonprofit that provides toys to less fortunate children. Andi's goal this summer is to learn how to wakeboard. Andi is known as the "office entertainment" in our Greenville office, always full of good stories and laughter. She describes her

AshCreek 5k and Fun Run
The Joel Bieber Firm celebrated Administrative Professionals Day on April 23rd with lunch and congregation at Brio Tuscan Grill. Pictured here is the staff from the Richmond office. The Greenville staff enjoyed lunch at Kanpai of Tokyo.
Spring Recipe: Cinnamon Roaster Pineapple with Macadamia Nut Cream While looking for something healthy for this month's newsletter, we stumbled upon this interesting and delicious recipe.
On Saturday, May 3rd, Paralegal Amy Mott, and Assistant Director of Operations, Alexandra Longest participated in the AshCreek 5k to benefit YoungLife. Read more about the race, YoungLife, and their efforts here.
Pic' O' Day
1. In a small bowl of boiling water, combine 3/4 cups raw unsalted macadamia nuts and 1/3 cup pitted dates and allow to soak for 30 minutes. 2. Preheat the oven to 400 degrees. Arrange 1 pineapple worth of peeled, cored, 1/2" thick pineapple slices on a baking sheet covered with parchment paper. Sprinkle with 1/2 teaspoons ground cinnamon. Roast until tender and lightly brown. 3. Pour original mixture of nuts, dates, and water into blender. Add 1 teaspoon pure vanilla extract and 1/8 teaspoon sea salt. Blend until smooth.

The Joel Bieber Firm 19th Annual Tabernacle Baptist Academy Scholarships
The Joel Bieber Firm also provides two annual $1,000 scholarships to graduates of Tabernacle Baptist Academy, in honor of his mother and father, Dorothy and Carl. These scholarships are specifically awarded to seniors who excel in their respective courses and demonstrate a willingness to learn.
